Stuffed Mushrooms

Quinoa Stuffed Mushrooms

I made this recipe up the other day and I wanted to share it with you. It will be a repeat in our house. The only complaint was that I should have made more. I used large, white stuffing mushrooms. You know, the kind that take up the entire palm of your hand. I made a filling out of quinoa, spinach, leftover stringy roast beef, garlic, and mozzarella cheese. They are so easy! I made fifteen mushrooms (2 packages), which served the five mushroom eaters in our family with three each.

15 large stuffing mushrooms, stems removed
3/4 cup cooked Quinoa (I used white quinoa, but would have preferred the nutty taste of the red.)
1/2 cup chopped spinach, thawed if frozen, wilted if fresh
2 small garlic cloves, minced
1/2 - 3/4 cup cooked roast- chopped
1/2 cup  grated mozzarella cheese for filling
1/4 cup mozzarella cheese ( grated or sliced) for top

Place the mushroom caps, inside down on a lightly greased baking pan with sides. Bake in a 325 oven for about 20 minutes. Flip them over with a spatula and cook another 10 minutes. Remove from oven.

Mix the quinoa, spinach, garlic, and cheese for filling. Spoon them evenly into the mushroom caps. Top with remaining cheese. Place in oven for 5-7 minutes until the cheese melts and begins to brown. Enjoy!

They even rewarmed well! You could substitute chicken for the beef in this dish. You could also used brown rice if you don't like quinoa. They were so yummy!
