As our laying hens get older, we see more flaws in their eggshells. It seldom means anything has changed on the inside, but shells tend to be more fragile, sandpaper textured, or wrinkled. I 'll go and commiserate with the hens about wrinkles!
When I pack eggs for the market I have to pull any egg that isn't pretty or feels strange when you touch the shell. I'm getting about eight dozen each week that cannot be sold. Angel food cake anyone? Speaking of cake, I just found a recipe for gluten free angel food cake using equal amounts of coconut flour and arrowroot in the place of regular flour. My family loves the cake and each one uses a dozen egg whites! Now I'm waiting for the flawed Prime Rib. Oh, C.S.Farmer...
New layers often lay eggs like that too. How old is "old" for laying hen?
ReplyDeleteI didn't know hens can lay eggs like that, mind you moms skin is looking like that so she must be getting old ;) I don't think she lays eggs!!!
ReplyDeleteHappy Easter

It sounds wonderful. It is funny about those flawed eggs, I get some but not that many.
ReplyDeleteIt is good you can always use them.
Have a lovely day.
Strange...I feel bad for the poor flawed eggs. Glad you make something beautiful out of them:)))

I had chickens (new layers) that had smallish eggs at first, but I am not familiar with older hens. Cool looking egg and I cannot believe you get 8 dozen unsellable eggs each week. Whew!
