White Lasagna

White Lasagna
     Two weeks ago, I was answering questions for a blog hop. The first question asked about my favorite pasta dish. I responded that I made a lasagna with spinach, artichokes, mushrooms, and chicken in a white sauce. I had several requests for a recipe. I would like to share this recipe with you.

Spinach, Mushroom, Artichoke Lasagna
8 oz pkg. Mushrooms, sliced (Baby Bellas are my favorite)
olive oil
10 pkg. frozen spinach, chopped
2 cans artichokes, quartered (not marinated)- drained
1 pkg. no-boil lasagna noodles
1 large container Ricotta cheese
2- 3 cups mozzarella, grated
1/2 -3/4 cup Parmesan cheese
3 Tablespoons butter
3 Tablespoons flour
3 cups milk
2 cloves garlic, minced

salt and pepper to taste

Preheat oven to 350 degrees. Spray a 13x9 pan with spray oil.
Sauté mushrooms in olive oil.

Thaw spinach and drain in colander. You will need to squeeze the spinach to get all of the moisture out.

Melt butter. Whisk in flour. Add garlic.

Slowly add the milk, while whisking. The white sauce will thicken. Stir in Parmesan cheese. Salt and pepper to taste, but keep in mind that the Parmesan adds salt.



Pour a small amount of white sauce in prepared pan.

Layer with uncooked (no-boil) noodles.

Put half of Ricotta on noodles, dropping by spoonful.
Spoon half of spinach over noodles.
Put half of the artichoke hearts on spinach. 
Put half of mushrooms on spinach.

Sprinkle about 1 cup or more of the mozzarella on top. Pour a bit of white sauce on top.
Layer noodles and repeat all the layers of spinach, artichoke, mushrooms, and cheeses.

Pour white sauce on this layer too.
Top with another layer of noodles, then the remainder of the white sauce.
Cover with foil and bake for 30 minutes.
