Pineappleless Pineapple Pudding Cakes

Pudding Cake

My computer tells me that there is no such word as pineappleless. I beg to differ! These little pudding cakes are wonderful. They have a pina colada flavor, yet there is no pineapple in them. Any guesses? Give up?
Okay, I used zucchini instead of pineapple. I simmered grated zucchini(the white part) in pineapple juice. You may ask, why not use pineapple? Because my East Coast garden runneth over with zucchini, not pineapple. Besides, it's really fun to make something with an unbelievable ingredient. Here's my recipe.

Pineappleless Pineapple Pudding Cakes
the pineapple part:
2 cups coarsely grated zucchini, peeled,and seeded
3/4 cup pineapple juice
2 Tablespoons lemon juice
1/3 cup sugar

Put the above ingredients in a pan. Bring to a slow boil and turn way down to simmer for 25 minutes. Let cool.

the pudding cake part:
3 Tablespoons unsalted butter
3/4 cup sugar
4 eggs, separated
6 Tablespoons flour
pinch of salt
1 1/2 cup milk (if you can't handle milk, use coconut milk or rice milk)
1/2 teaspoon coconut extract (optional)
1/2 teaspoon vanilla
1/2 cup shredded coconut 

Preheat oven to 325*. Spray 8 ramekins or small ovenproof bowls with spray oil. Have a large, sided pan (13x9) nearby.(I needed 2.)

Cream the butter and sugar in a bowl until wonderfully smooth.
Add the egg yolks one at a time.
Add the flour, one tablespoon at a time.
Slowly add milk while mixing. Mix in extract(s).

In a separate bowl, beat egg whites until they form stiff peaks. Fold in the butter/sugar mixture. Fold in the pineapple and juice from the pan. Fold slowly. Divide equally into the ramekins or bowls.

Pour hot water about 1 1/2 inch up in the 13x9 pans. Place the ramekins/bowls in the pans. Bake for 25-30 minutes.

We tried these warm. We tried these cold. We will need to try them several more times to get a grasp on how we like them best! Warm definitely demands vanilla ice cream. Cold was okay without. Hmm? Maybe whipped cream! These got a big "thumbs up" from all eight people at our dinner table.

My home state is actually Maryland :) Thats where we just came from before moving to Camp Pendleton in California. I was born in Baltimore, but spent many of my days in Glen Burnie or Annapolis. Small world, huh?

    My puppy of only 4 months is a Chihuahua and daschund mix. He's so adorable, and spoiled...and he knows it.

    Ps-I'm gonna have to try this pudding cake!
